The Finishing Touches

Here's a behind-the-scenes French secret, a kitchen-sized blow torch to make just the right crusty topping for our Easter Coquilles Saint Jacques (scallops)...

These were exquisite. Sorry, but I didn't get the recipe... I scarfed mine down before I could even think of asking, and then the next course came... I think our holiday meal lasted about two hours...
